And your words show your lack of experience in the matter. Usually work laptops have their bios locked down, so you can't access it and change the boot sequence and install what you want.
Some just put a password that sometimes can be reset, other times there are full on lockdowns by dedicated security apps that are very difficult (if not impossible) to circumvent.

after a few months of tries this one looks better!
- 200gr wholemeal stoneground flour
- 80gr spelt flour
- 100gr white flour
- 100gr starter
- 250ml water (actually a smidge less than that)
- salt
Folded 5 times every 30 minutes. Let it rest for a 5 hours on the kitchen counter, degassed (well, that's just a fancy word, it just deflated when I poked it lol), then let it rest overnight (12 hours) in the fridge. Cooked in the oven inside dutch oven. Let it cool for 24hours before cutting it.
Taste good, it's not as wet as the previous experiments where I just let it rest overnight in the fridge.
It's "dense", which in a way is good because if the holes were too big the butter/peanut butter would just drip through! But I'd like to have it a just a bit more fluffy I guess. I know the starter is good because when I feed it it grows like crazy (and smells good).

Just so you know, you can run pi-hole as a container as well
About dhcp, I don't know about unifi, but I guess in the firewall you can configure static dhcp leases. So son1 devices always get same ip. Then you can configure a hairpin port forwarding, so any requests for ports tcp/udp53 from his devices get forwarded to pi-hole. That is assuming that in the "general" dhcp config you assign an external dns.
Otherwise you could try creating two different dhcp pools, one with pi-hole (and make sure son1 devices get a static lease in there) and one for everyone else.
As a side note, I recommend looking into self hosting your piped instance, so even son2 can enjoy YouTube without all the ads! (And the tracking)
