I desire meatloaf now. A moist meatloaf.
I make a beautiful one, with a layer of scotch eggs through the middle, then its wrapped in bacon and cooked. Tip it out onto a flat baking tray and top with mashed potatoes and cheese and back in the oven... its awesome.
I bet mr seagoon would like this recipe

I have never had meatloaf. Not ever.
It's like a giant sausage roll without pastry. Must be served with mashed potato and gravy. Delicious.
A solid chunk (baked in a loaf pan) of mince, chopped onion, breadcrumbs, grated veg (any), an egg, and herbs/spices/flavourings to taste. All mooshed up by hand and then topped with any one of a tin of crushed tomatoes, a shittonne of cherry tomatoes or chopped regular ones. Bake covered for 1 hour at 180 deg C till you hear it bubbling in the pan, then take cover off pan and bake for another 30 mins to let the excess liquid evaporate. Tomatoey top should be just a tiny bit caramelised. Remove from pan and serve in slices with carb & salad or as per CEO's suggestion. At it's best cold the next day in a sanger. And the juice that remains in the pan is definitely the cook's perks.
Best teenager kibble on record (yes I'm including spag bol in that reckoning). And a good way to insert veg into reluctant children (of any age). Some persons (whom I will not mention but the Two Fat Ladies are prominent among them) wrap the mooshed up chunk in bacon slices, bake on a shallow tray and omit the tomatoes. This is good but in a loaf pan is the go to imo.
Youβre not missing much, but itβs true that the leftover sandwiches are the real hero of the story.
