The 'snap' of the casing - which I have since found out is a key corporate food design sausage concept 😋 - was all right but a bit floppy.
Can you expand on this? Also poking holes should prevent pressure from building and causing a catastrophic burst, but it does that by allowing liquids and gasses to escape.
And this is where the strategic placement of those holes is important to make sure that they go in on the ends don't poke it in the middle it will overcook the center.
The snap is the way the casing feels in your teeth and you bite into it and I'm trying to find the best snap...I know for some people it's not about meat replacement but in this case, for me it is.
Yes, poking holes should prevent it from bursting. It's not worked that simply so far 💁♀️
