Unpopular opinion: this game isn't that great. It's basically doing chores and if you don't do them on time, it can set you way back, the gifting mechanism is annoying and punishing for giving the "wrong" gift even though the hints are limited, there's nothing to really like about most of the characters as they're selfish and demanding, I found the gameplay annoying without mods, and it's repetitive to the point of pure boredom.
I've never understood the attraction.
It's cool how different people like different things. I think a lot of the appeal is the simulated escape from the dominant flavor of soulless daily corporate drudgery, to something that feels more grounded and community based. Of course it's just a shallow simulation but escapism is a huge part of gaming in general.
There's also the quaint pixel art and soundtrack and cozy vibes mixed with some not so cozy aspects like most of the characters having flaws and being imperfect.
My family makes fun of me (lightheartedly) when we play multiplayer because I pretty much just fish, forage, and chill. That's my escape fantasy, I don't need to be maximizing profits and getting the biggest house. That's another nice thing about the game, you can play your own way at your own pace without setting off some lose condition.
All that said, of course not everyone will like the game. Humanity is awesome in its diversity, take it easy out there pard
Kind of like saying Call of Duty is basically just shooting guns and if you don't shoot the right things it sets you back. The fun of the game is getting good at the game.
Personally, I absolutely adore SDV. The music and sound effects are embedded in my soul. The characters are just charming. The pixel art is simple but endearing. Multiplayer is a ridiculous amount of fun. And with the continuous updates, I always feel that I can hop back in to discover more, so it feels like a living world that I visit.
So I really enjoyed it, but I think there's a giant prerequisite that you have to like this kind of game to start with.
If it feels like a chore then the core gameplay loop is not your thing and that's ok.
If you like this farming style game, then Stardew Valley offers a lot of depth. Ultimately I can definitely see why some people wouldn't enjoy it, though.

Excuse me what's so relaxing about the clock running down on you every day, your character moving at the speed of an ant
People not being accessible at certain hours
Nothing is obvious without using the wiki

Stardew captured a niche but it certainly is overrated
I've heard some of these critiques of the game before. It surprises me how many people are bothered by the clock ticking down when there's no consequences to going at your own pace. That's what I find relaxing. I can just sit down, and explore, play, figure things out, etc. The fact that things aren't obvious and not spoon fed to you is enjoyable to me. There's not other people running around frantically. Didn't catch an NPC today? I'll catch them tomorrow. It's relaxing in its simplicity.
I think people don't find the game relaxing when they put their own restrictions and goals in place (Got to get this person to X number of hearts by such and such a date, etc).
I think it’s a personality based thing. The clock interacts with a person’s natural tendencies in a way that causes constant pressure and stress. These folks need to be away from clocks in order to relax. They see SDV’s rather rapid daily clock as a fatal flaw in a game that should otherwise be quite relaxing.

Fair points. I guess none of that really bothers me since I'm not trying to do everything within a given number of in game years. I don't feel punished by the game ever except for maybe when I die in a dungeon and lose some of my stuff.
I could see how if you don't enjoy the day to day game loop that could be the punishment though. Haha.
