Drones are perfect for this sort of stuff. You don't want to render it a total write off - you want to damage it just enough that the Russians keep pouring resources into repairs. It's why sinking the Kuznetsov would be a temporary win, but making the Russians continuously repair it for a decade while never once being combat effective is a much better outcome.
