If you know you're only going to eat 8 ounces at a time, pasta sauce freezes just fine. Separate the jar into 8 oz portions and freeze them for later use.

An 8 ounce can of tomato sauce is dirt cheap, buy that, add sugar, oregano, Italian seasoning, salt and pepper, onion powder and garlic powder.
And if you're lazy you can probably get some pre mixed seasoning with all of those.
You can get smaller jars, though the exact brand and quality will vary.
But you can freeze the leftover sauce with no real issues. So you don't have to waste anything.
With the cost and weight of 8oz glass jars, they'd probably have to sell them at an extremely high price, or take a loss on each one.
In the UK it's quite common for sauces to be available in 1 or 2 person pots/pouches, not sure where you are but see if there is an Aldi near you. They do some stir in sauce pots here at least.
I always think of it as Americans "family first* bullshit we do. Everything is always made and designed for a nuclear family and it's just fucking dumb and I hate it. It's always cheaper to buy bigger too and I'm just like. I want one thing and they give me 30.
So yeah I get that and I hate it just as much. It's so incredibly wasteful.
Crazy people. Aldi/Lidl here (in Germany) have cans of chopped tomatoes and the standard size is 425ml. Which is pretty much good to make pasta sauce for 2 people?!
