I wouldn't call cactus fruit particularly exotic.

As someone who doesn't live in a desert. How do you process these, without having to deal with needles in your hands for the next few days?

Pair of leather gloves and some time, there aren't too many needles on the fruits themselves so you can just kinda pull them out, alternatively you use a knives.
