It also is a stupid point. If you follow the same recipe and use exactly the same ingredients as a Michelin star chef, a skilled home cook can absolutely produce food on par with the finest restaurants in the world.
Heirloom tomatoes absolutely are different and better in a lot of instances. They're also easily available at every grocery store for marginally more than a shit hothouse slicer tomato.

That's french cooking, Michelin star meals do involve more skill and knowledge than "more butter, more garlic". Not so much more that you can't replicate most of it at home, but, just to emphasise how bad a choice of analogy this was, the bits that are too complex to do in your kitchen require specialised machines.
