Is it just plot armor or is there some sort of force sense that allows them to know when a bolt is coming from directly behind them?

Precognition is one of the most common Force abilities we see. Adept Force users are able to sense anything from the timing and location of a blaster bolt to the impending downfall of society.

The force.

The living force connects all living things and they can sense other people’s intents and emotions and thoughts through it.

The physical force also would warn them (or just make them aware) of things like falling rocks, too.

Different aspects, you could say, of The Force.

Gin explains to Yoda (as a force ghost,) that the living force feeds into the cosmic force, etc. the living force connects all living things where the cosmic force is where the living go when they no longer live, the physical force connects inanimate objects (and lets Jedi toss rocks,) etc.

But it’s all the same thing in the end, just a question how to see it.

In the Prequels a lot of Jedi get shot and die, but it makes sense in a scifi reality that the biggest threat to them as melee combatants is blasters and also the one thing they're most trained to deal with. But yes, they can feel their surroundings with the force.

Well, most the Jedi in that fight sucked. They were the kind of Jedi who never left the temple and only trained enough in combat to say they trained. Nothing wrong with that. Their role was academic or social or anything but military.

As a form, Niman was “just enough” to not be totally useless. (It was still mostly useless, the whole point was it was simple for Jedi to learn allowing them to focus on other things.)

They were also severely overwhelmed and it was a math game- if a Jedi could deflect 50 bolts a minute, 51 bolts would eventually kill him.

If you’re attuned to the Force and are going into a situation where you expect you might get shot you’ll have elevated senses and faster reaction times. But Order 66 proved that getting shot in the back when you least expect it is an efficient way to kill a lot of Jedi. Yoda had plot armor, you would think he would have been the first one Sheev had hit so that he didn’t have a chance to feel all those deaths ripple through the Force.

Jedi can have precognitions, I always assumed it was because of that and heightened senses.

I'm not sure about Disney's lore, but in Legends Jedi are basically super-psychics that can tap into (sometimes literal) magic abilities. That's the reason why they fall so hard on either side of the spectrum, but it also gives them a bit of a general sixth-sense (most video gameplay doesn't count imo) about their vicinity kinda like Spider-Man.

The laser guns all make a big noise, and I believe there's a thing called force speed.

Same as any super hero, the use super powers. So yes, it's plot armour. Anything that has super powers is actually plot armour.
