Mine is pic related, the Victory Gundam. What I like about it is how modular the mobile suit is. It's the result of years of ms tech late into the Universal Century where now the Gundam is mass produced. In the show the rebel forces are shown to have a stockpile of Gundams in a bunker so they can burn through parts.
Honorable mention to the RX-79 G ground type Gundam from 8th MS Team.

That was my favorite for a long time and then I was partial to the Zaku I Sniper before settling on the Crossbone Gundam. Everything about it is so fuggin' sick
Hell yeah! May not be a Gundam, but it was the prototype that lead to all the other mechs for the Wing series. So I still more or less count it and its sequels on-par with the Gundams. I got an Endless Watlz special edition Master Grade model and was just sick! So was the whole set from that line of models, really need to finish collecting them. Aside from TG I, I have: Deathsythe (non-Hell), Wing (non-Zero), Heavyarms (pre-custom), and Sandrock (haven't built it yet though). It is nice to see what the original versions look like with the Endless Waltz treatment.
Tequila Gundam goes kinda hard
I'm not sure if I should be offended because this is ... somehow racially insensitive... or I should celebrate the diversity of cultures depicted in the show... 
G Gundam has some problematic shit in it. At least the pilot of the Tequila Gundam (yes, it's called that) is more or less a normal character. The depiction of the pilot and Gundam from Neo-India are just racist.

Gundam Wing was my first experience with Gundam, so they've all got a special place in my heart. But, "It's Wing Zero!" Is what pops in my head on a regular basis.

As a kid I loved Deathscythe and Epyon, though I only ever got the Epyon kit(3 times!)
The Wing Zero Custom from Endless Waltz with the silly angel wings is such a classic lol

As a kid I used to watch this Endless Waltz ad over and over (from a DVD or one of the PS2 games) because it had a snip of this scene and other dope stuff with Last Impression over it lol.
I think my favourites are all grunt designs: Jesta, Jegan ECOAS type, Chuchu's Demi Trainer

Probably the Ez8 Gundam, for being the closest a Gundam would get to being a grunt suit. GP01, Turn A, Unicorn, Barbatos and Aerial are cool too. (But my guilty pleasures are the Freedom/Strike Freedom and the Wing Zero Custom EW for how stupidly over-designed and OP they are.)
So, what I'm getting from this thread is that there is a lot of Gundam out there.
I was too dumb as a child to understand it.
Been a thing since 1979, we got decades of Gundams.
The Neo Zeong, narrative version.
Hands down the Double Zeta.
That show went hard and a combiner Gundam was so silly but Tomino played it straight.
